Our Wines

Amauta Corte I – Inspiration

The Amauta, in the original cultures of Cafayate, was the great teacher, the wise man. Respected for his knowledge of human subjects, of nature, and of the universe, it was he who taught to live.

These teachings were based on the Divine duality, two principles that harmonically complement each other, such as the sun and the moon, day and night, and life and death.

Our  blends come together with this perfect harmony and their names come from our values: Inspiration, Respect, Reflexion and Innovation.  These wines are aged in oak barrels and in big barrels or Cubas of 6,000 litters to preserve the fruit.

As part of this line we also produce wines without any oak, we called them Absolutos, and our goal is to show the purity and the quality of the fruit we can obtain in our region. We produce the varieties that best develop in the area: Malbec, Tannat and Torrontes.

Malbec: 2nd week of february. Cabernet Sauvignon: 1st week of March and Syrah: third week of February. By hand in 20 kg bins.

Cold pre-fermentative maceration for 4 days at 5ºC. Alcoholic fermentation for 14 days. Spontaneous malolactic fermentation.

Aging

In large oak vats (cuves) and American and French oak barrels for 6 to 8 months.

Storage: Because of its structure this is a wine that can be aged for up to 8 years.
