Laborum, “from our work”, is our emblematic line. It is our search for the genuine expression of Cafayate.

Laborum is the varietal expression of Cafayate.

It is the reflection of our work, our care in the vineyard and integration in the winery, which result in these single varietals with a genuine artisanal focus, and offer us the particular experience of wines that express all the character of their origin.

Our varietal makeup showcases the best of the Cafayate terroir, and the line is made up of wines from very low yield (6 tons/hectare) vineyards.

Vineyards

Finca Río Seco: viñedos propios ubicados a 1.700 metros sobre el nivel del mar, en el Valle de Cafayate, Salta.

Structure

Conducción en espaldero con Sistema de Posicionamiento Vertical (VPS). Rendimiento: 5 TN/has con raleo de racimos. Edad del viñedo: 16 años.

Harvest

Segunda quincena de marzo. Manual, en cajas de 20 kg.

Fermentation

Maceración prefermentativa en frío durante 6 días a 4 grados C, duración de la fermentación alcohólica de 15 días aproximadamente; a temperatura controlada entre los 27 y 29 grados C. Maceración postfermentativa de 20 días aproximadamente. Fermentación maloláctica espontánea.

Aging

En barricas de roble francés y americano de primer y segundo uso, por 12 meses.

Tasting Notes

Eyes: rojo rubí con tonalidades violáceas, brillante y muy expresivo.

Nose: frutos rojos y negros frescos como frambuesa o guinda. Acompañados de un especiado característico de pimiento rojo maduro, notas a grafito y sutiles aromas de vainillas aportado por la madera nueva.

Mouth: con una entrada dulce y armónica, de largo final en boca que lo hace ser un vino elegante.

Storage: es un vino que permitirá, por su estructura, una guarda de hasta 12 años.

Back conduction in VSP System. Low yield vines with a production of 5 tons/ hectare. Age of vineyard: 13 years.

2nd week of March. By hand in bins of 20 kg.

Fermentation

Cold pre-fermentative maceration for 6 days at 4 degrees. Alcoholic fermentation time: 15 days with a controlled temperature between 27 and 29 degrees. Post- fermentative maceration of 30 days. Spontaneous malolactic fermentation in barrels.

Nose: red fresh fruits like raspberry and cherry, combined with
mature red pepper. With vanilla aromas given by the oak.

Mouth: sweet and harmonic beginning, with long and persistent final.

Storage: because of its structure, this wine can be storage for 12 years.

Tasting Notes

Eyes: Red with violet tones, bright and very expressive.

Nose: Red and black fruits like raspberry and cherry, together with black pepper, vanilla and chocolate aromas.

Mouth: Very nice beginning, intense, with personality and good acidity. It has a very long finish.

Storage: Because of its sturcture, this wine allows storage of 15 years.

Cold pre-fermentative maceration for 48 hours wih a controlled temperature of 25 ºC. Maceration posrt-fermentative for 13 days.

Aging

70% in French oak and 30% in American oak barrels of first use from 10 to 12 months.

Tasting Notes

Eyes: Vivacious, intense ruby red.

Nose: Red fruits, cassis, with a spice smell of pepper and walnut. The harmonious wood with a delicate vanilla note given by the french and american oak emphasizes its structure in mouth.

Mouth: Pleasant beginning, good structure, a harmonious wine with intense and round tannins.

Storage: Because of its structure its a wine that could be storage for 10 years.
