Single Vineyard Wines.
Laborum, “from our work”, is our emblematic line. It is our search for the genuine expression of Cafayate.
Laborum is the varietal expression of Cafayate.
It is the reflection of our work, our care in the vineyard and integration in the winery, which result in these single varietals with a genuine artisanal focus, and offer us the particular experience of wines that express all the character of their origin.

Our varietal makeup showcases the best of the Cafayate terroir, and the line is made up of wines from very low yield (6 tons/hectare) vineyards.

Harvest
Primer cosecha: 6 de febrero (cuartel 9 A) y el 8 de febrero (cuartel 7). Ambos cuarteles tienen diferentes selecciones masales, es decir distintos perfiles de Torrontes. Segunda cosecha:22 de Febrero (cuartel 9 B). Tercer cosecha: 12 de Marzo (cuartel 4). Manual, en cajas de 20 kg.
Fermentation
Selccion de Racimos y Prensado de racimos enteros, uso de levaduras seleccionadas. Fermentación alcohólica de 30 días a temperatura entre los 11ºC y 13ºC. Trabajo de Lias por 3 meses, Desborre y Blend Final en Septiembre. No se realiza fermentación malo láctica.

Tasting Notes
Eyes: amarillo con tonalidades verdosas, de buen brillo y vivaz.
Nose: carácter frutado, fresco y perfumado. Intenso, elegante, con un interesante segundo plano floral que recuerda a rosas acompañado de notas cítricas.
Mouth: fresco, joven, frutal, agradable. Buena estructura, equilibrado y de muy buena acidez.
Se recomienda beberlo entre los 10 a 12 grados de temperatura.

We recommend to drink this wine between 10 to 12 degrees C.
