Laborum Torrontés Oak Fermented

Single Vineyard Wines.

Laborum, “from our work”, is our emblematic line. It is our search for the genuine expression of Cafayate.

Laborum is the varietal expression of Cafayate.

It is the reflection of our work, our care in the vineyard and integration in the winery, which result in these single varietals with a genuine artisanal focus, and offer us the particular experience of wines that express all the character of their origin.

Our varietal makeup showcases the best of the Cafayate terroir, and the line is made up of wines from very low yield (6 tons/hectare) vineyards.

Finca El Retiro: vineyards located at 1.650 mts (5,413 ft) above sea level in Cafayate Valley, Salta.

Structure

Parral or pegola system. Production: 10 tones/hectare. Age of vineyard: 65 years.

Harvest

2nd week of February. By hand in bins of 20 kg.

Fermentation

Pre-fermentative maceration in a press with carbonic for 4 hours. Alocholic fermentation with selected yeast for 25 days with a controlled temperature between 13º C and 15º C in new oak french barrels. Spontaneous malolactic fermentation.

Aging

Pre-fermentative maceration in a press with carbonic for 4 hours. Alocholic fermentation with selected yeast for 25 days with a controlled temperature between 13º C and 15º C in new oak french barrels. Spontaneous malolactic fermentation.

Tasting Notes

Eyes: Yellow with bright golden tonalities.

Nose: Fresh and fruity. Intense and elegant with a second aroma of flowers like roses along with vanilla due to the time in oak.

Mouth: Good structure, balanced and with a very good acidity. A complex wine with a nice and long finish.

We recommend to drink this wine between 10 to 12 degrees.
